  • Black pepper - 1/4 teaspoon
  • Red bell pepper - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 100 grams, halved
  • Green olives - 50 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Almonds - 30 grams, sliced
  • Dried cranberries - 30 grams, unsweetened
  • Lemon juice - 1 tablespoon

Steps

  1. In a large skillet, heat olive oil over medium heat and add the cauliflower rice. Sauté for 5-7 minutes until tender.
