  • Zucchini - 200 grams
  • Eggplant - 150 grams
  • Red bell pepper - 100 grams
  • Onion - 100 grams
  • Garlic - 3 cloves
  • Canned diced tomatoes - 200 grams
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Dice the zucchini, eggplant, and red bell pepper into small cubes.
  3. Finely chop the onion and garlic.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat, then add the onion and garlic, sautéing until fragrant and translucent.
  5. Add the diced zucchini, eggplant, and bell pepper to the skillet and cook for about 5-7 minutes, stirring occasionally until slightly softened.
  6. Stir in the canned diced tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well and let simmer for another 5 minutes.
