Ingredients

  • Quinoa - 100g
  • Cauliflower rice - 200g
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 small, grated
  • Chickpeas (canned, drained) - 100g
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 250ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the quinoa under cold water and drain well.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic, diced red bell pepper, zucchini, and grated carrot to the skillet. Cook for another 5-7 minutes until the vegetables soften.
  5. Stir in the rinsed quinoa, chickpeas, tomato paste, vegetable broth, cumin, cinnamon, paprika, salt, and black pepper. Mix well and bring to a simmer.
  6. Once simmering, remove from heat and fold in the cauliflower rice.
  7. Transfer the mixture to a baking dish and spread it evenly.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. After 25 minutes, remove the foil and bake for an additional 10 minutes until the quinoa is cooked and the top is slightly golden.
  10. Remove from the oven, let it cool slightly, and garnish with fresh parsley before serving.
