- Quinoa - 100g
- Cauliflower rice - 200g
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 small, grated
- Chickpeas (canned, drained) - 100g
- Tomato paste - 2 tablespoons
- Vegetable broth - 250ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- Rinse the quinoa under cold water and drain well.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced red bell pepper, zucchini, and grated carrot to the skillet. Cook for another 5-7 minutes until the vegetables soften.
- Stir in the rinsed quinoa, chickpeas, tomato paste, vegetable broth, cumin, cinnamon, paprika, salt, and black pepper. Mix well and bring to a simmer.
- Once simmering, remove from heat and fold in the cauliflower rice.
- Transfer the mixture to a baking dish and spread it evenly.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10 minutes until the quinoa is cooked and the top is slightly golden.
- Remove from the oven, let it cool slightly, and garnish with fresh parsley before serving.
