- Almond flour - 150 grams
- Psyllium husk powder - 10 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Warm water - 120 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Ground coriander - 1/2 teaspoon
- Cooked chicken, shredded - 100 grams
- Bell pepper, diced - 50 grams
- Red onion, diced - 30 grams
- Mozzarella cheese, shredded - 100 grams
- Fresh cilantro, chopped - 2 tablespoons
Steps
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
- Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms. Knead for a few minutes until smooth.
- Divide the dough into two equal portions and shape them into balls. Let rest for 10 minutes.
- In a separate bowl, mix the shredded chicken, diced bell pepper, diced red onion, mozzarella cheese, ground cumin, paprika, ground coriander, and chopped cilantro.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Roll out one dough ball into a thin circle (about 20 cm in diameter) and place it in the hot skillet.
- Spoon half of the chicken mixture onto one half of the dough, then fold the other half over to create a semi-circle.
- Cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat with the second dough ball and remaining filling.
- Serve hot, garnished with extra cilantro if desired.
