Ingredients

  • Almond flour - 150 grams
  • Psyllium husk powder - 10 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Cooked chicken, shredded - 100 grams
  • Bell pepper, diced - 50 grams
  • Red onion, diced - 30 grams
  • Mozzarella cheese, shredded - 100 grams
  • Fresh cilantro, chopped - 2 tablespoons

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  2. Gradually add warm water and 1 tablespoon of olive oil, mixing until a dough forms. Knead for a few minutes until smooth.
  3. Divide the dough into two equal portions and shape them into balls. Let rest for 10 minutes.
  4. In a separate bowl, mix the shredded chicken, diced bell pepper, diced red onion, mozzarella cheese, ground cumin, paprika, ground coriander, and chopped cilantro.
  5. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  6. Roll out one dough ball into a thin circle (about 20 cm in diameter) and place it in the hot skillet.
  7. Spoon half of the chicken mixture onto one half of the dough, then fold the other half over to create a semi-circle.
  8. Cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat with the second dough ball and remaining filling.
  9. Serve hot, garnished with extra cilantro if desired.
