Ingredients

  • Ground beef - 300 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Cauliflower - 300 grams, grated
  • Vegetable broth - 100 ml
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine ground beef, almond flour, egg, minced garlic, cumin, cinnamon, paprika, cilantro, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 3 cm in diameter.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
  4. In the same skillet, add the remaining olive oil and grated cauliflower. Sauté for 5 minutes until softened.
  5. Pour in the vegetable broth and lemon juice, stirring well. Cook for an additional 5 minutes until the cauliflower is tender and the liquid has reduced.
  6. Serve the meatballs over the cauliflower rice, garnished with additional cilantro if desired.
