- Ground beef - 300 grams
- Almond flour - 30 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Cauliflower - 300 grams, grated
- Vegetable broth - 100 ml
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine ground beef, almond flour, egg, minced garlic, cumin, cinnamon, paprika, cilantro, salt, and black pepper. Mix until well combined.
- Form the mixture into small meatballs, about 3 cm in diameter.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
- In the same skillet, add the remaining olive oil and grated cauliflower. Sauté for 5 minutes until softened.
- Pour in the vegetable broth and lemon juice, stirring well. Cook for an additional 5 minutes until the cauliflower is tender and the liquid has reduced.
- Serve the meatballs over the cauliflower rice, garnished with additional cilantro if desired.
