Ingredients

  • Lamb shoulder - 400 grams, cubed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chopped tomatoes - 200 grams (canned or fresh)
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cauliflower rice - 200 grams
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. Heat the olive oil in a large tagine or heavy pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Stir in the cubed lamb shoulder, browning on all sides for about 5-7 minutes.
  4. Add the ground cumin, coriander, cinnamon, paprika, turmeric, salt, and black pepper. Mix well to coat the lamb with the spices.
  5. Pour in the chopped tomatoes and bring the mixture to a simmer. Cover the pot and reduce the heat to low, allowing it to cook for 30 minutes.
  6. After 30 minutes, add the diced bell pepper and zucchini to the pot. Stir well and cook for another 15 minutes until the vegetables are tender and the lamb is cooked through.
  7. Meanwhile, prepare the cauliflower rice by steaming it or sautéing it in a separate pan for about 5-7 minutes until tender.
  8. Once the tagine is done, serve it over a bed of cauliflower rice, garnished with fresh cilantro and a squeeze of lemon juice.
