Ingredients
- Lamb shoulder - 400 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower - 1 medium head, grated
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, ground ginger, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and let it marinate in the refrigerator for at least 15 minutes.
- While the lamb is marinating, prepare the cauliflower rice by grating the cauliflower or using a food processor until it resembles rice grains.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the grated cauliflower and sauté for about 5-7 minutes, until tender. Season with salt and lemon juice, then set aside.
- Preheat a grill or grill pan over medium-high heat. Thread the marinated lamb onto skewers.
- Grill the lamb skewers for about 8-10 minutes, turning occasionally, until they are cooked to your desired doneness.
- To serve, place a generous portion of cauliflower rice on each plate, top with the grilled lamb skewers, and garnish with chopped parsley.
