Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 1 medium head, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, ground ginger, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and let it marinate in the refrigerator for at least 15 minutes.
  3. While the lamb is marinating, prepare the cauliflower rice by grating the cauliflower or using a food processor until it resembles rice grains.
  4. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the grated cauliflower and sauté for about 5-7 minutes, until tender. Season with salt and lemon juice, then set aside.
  5. Preheat a grill or grill pan over medium-high heat. Thread the marinated lamb onto skewers.
  6. Grill the lamb skewers for about 8-10 minutes, turning occasionally, until they are cooked to your desired doneness.
  7. To serve, place a generous portion of cauliflower rice on each plate, top with the grilled lamb skewers, and garnish with chopped parsley.
