Ingredients
- Eggplant - 1 medium (about 250g)
- Ground lamb or beef - 200g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato paste - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50g, crumbled
- Mozzarella cheese - 100g, shredded
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1.5 cm thick rounds and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
- Pat the eggplant slices dry with a paper towel and brush both sides with olive oil.
- Place the eggplant slices on a baking sheet lined with parchment paper and roast in the oven for 20 minutes, flipping halfway through, until tender and slightly golden.
- While the eggplant is roasting, heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent.
- Add the ground lamb or beef to the skillet, breaking it up with a spatula, and cook until browned.
- Stir in cumin, cinnamon, paprika, salt, black pepper, and tomato paste. Cook for an additional 5 minutes until well combined.
- Remove the skillet from heat and fold in chopped parsley.
- Once the eggplant is done, remove it from the oven and top each slice with the meat mixture, crumbled feta cheese, and shredded mozzarella.
- Return the topped eggplant slices to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and serve warm, garnished with additional parsley if desired.
