Ingredients

  • Eggplant - 1 medium (about 250g)
  • Ground lamb or beef - 200g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato paste - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50g, crumbled
  • Mozzarella cheese - 100g, shredded

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1.5 cm thick rounds and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.
  3. Pat the eggplant slices dry with a paper towel and brush both sides with olive oil.
  4. Place the eggplant slices on a baking sheet lined with parchment paper and roast in the oven for 20 minutes, flipping halfway through, until tender and slightly golden.
  5. While the eggplant is roasting, heat a skillet over medium heat and add 1 tablespoon of olive oil.
  6. Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent.
  7. Add the ground lamb or beef to the skillet, breaking it up with a spatula, and cook until browned.
  8. Stir in cumin, cinnamon, paprika, salt, black pepper, and tomato paste. Cook for an additional 5 minutes until well combined.
  9. Remove the skillet from heat and fold in chopped parsley.
  10. Once the eggplant is done, remove it from the oven and top each slice with the meat mixture, crumbled feta cheese, and shredded mozzarella.
  11. Return the topped eggplant slices to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
  12. Remove from the oven, let cool slightly, and serve warm, garnished with additional parsley if desired.
