Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 100ml
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then pat dry with a paper towel.
  3. In a mixing bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, black pepper, and lemon juice. Mix well.
  4. Add the eggplant slices to the bowl and coat them with the spice mixture.
  5. Place the eggplant on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, flipping halfway through.
  6. In a skillet over medium heat, add a little olive oil and sauté the diced bell pepper and zucchini until softened, about 5 minutes.
  7. Once the eggplant is done roasting, remove it from the oven and combine it with the sautéed vegetables and vegetable broth in the skillet.
  8. Cook everything together for an additional 5 minutes to allow the flavors to meld.
  9. Serve hot, garnished with fresh parsley.
