Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Chicken breast - 200 grams, diced
  • Moroccan spice blend - 1 tablespoon
  • Red bell pepper - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Steam the cauliflower florets until tender, about 10 minutes, then drain and cool.
  3. In a food processor, blend the steamed cauliflower until it resembles rice, then transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, mix the cauliflower, 100 grams of mozzarella, Parmesan, and egg until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden brown.
  7. While the crust bakes, heat olive oil in a skillet over medium heat and sauté the diced chicken, adding the Moroccan spice blend, for about 5-7 minutes until cooked through.
  8. Add the sliced bell pepper and onion to the skillet, cooking for an additional 3-4 minutes until softened.
  9. Stir in the fresh spinach and cook until wilted, then remove the skillet from the heat.
  10. Once the crust is ready, remove it from the oven and top with the chicken mixture, remaining mozzarella, and crumbled feta.
  11. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly and golden.
  12. Garnish with fresh cilantro before slicing and serving.
