- Cauliflower - 300 grams (for crust)
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Olive oil - 1 tablespoon
- Chicken breast - 200 grams, diced
- Moroccan spice blend - 1 tablespoon
- Red bell pepper - 1 medium, sliced
- Red onion - 1 small, sliced
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (428°F).
- Steam the cauliflower florets until tender, about 10 minutes, then drain and cool.
- In a food processor, blend the steamed cauliflower until it resembles rice, then transfer to a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower, 100 grams of mozzarella, Parmesan, and egg until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet to form a pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden brown.
- While the crust bakes, heat olive oil in a skillet over medium heat and sauté the diced chicken, adding the Moroccan spice blend, for about 5-7 minutes until cooked through.
- Add the sliced bell pepper and onion to the skillet, cooking for an additional 3-4 minutes until softened.
- Stir in the fresh spinach and cook until wilted, then remove the skillet from the heat.
- Once the crust is ready, remove it from the oven and top with the chicken mixture, remaining mozzarella, and crumbled feta.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly and golden.
- Garnish with fresh cilantro before slicing and serving.
