- Red bell pepper - 1, diced
- Carrot - 1 small, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Start by washing and drying the cauliflower. Remove the leaves and stem, then cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic, diced red bell pepper, and diced carrot to the skillet, cooking for another 3 minutes until softened.
- Stir in the ground cumin, ground coriander, smoked paprika, turmeric, salt, and black pepper. Cook for an additional minute to toast the spices.
- Add the processed cauliflower rice to the skillet, stirring well to combine with the vegetables and spices. Cook for about 8-10 minutes, stirring occasionally, until the cauliflower is tender.
- Remove the skillet from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
