  • Red bell pepper - 1, diced
  • Carrot - 1 small, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Start by washing and drying the cauliflower. Remove the leaves and stem, then cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
