Ingredients

  • Cauliflower - 400 grams (about 1 medium head)
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Almond flour - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 100 grams (preferably no added sugar)
  • Red bell pepper - 1/2, diced
  • Zucchini - 1/2, diced
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the stems and leaves from the cauliflower, then pulse florets in a food processor until they resemble rice.
  3. Transfer the riced cauliflower to a microwave-safe bowl and microwave for about 5-7 minutes until softened.
  4. Let the cauliflower cool for a few minutes, then place it in a clean kitchen towel and wring out as much moisture as possible.
  5. In a large mixing bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, garlic powder, cumin, coriander, paprika, salt, and pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 20-25 minutes until golden and firm.
  8. While the crust is baking, heat the olive oil in a skillet over medium heat. Add the diced bell pepper and zucchini; sauté for 5-7 minutes until tender.
  9. Remove the crust from the oven and spread the tomato sauce evenly on top.
  10. Add the sautéed vegetables and sprinkle with crumbled feta cheese.
  11. Return the pizza to the oven and bake for an additional 10 minutes.
  12. Remove from the oven, garnish with fresh parsley, slice, and serve.
