Ingredients
- Cauliflower - 400 grams (about 1 medium head)
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Egg - 1 large
- Almond flour - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Tomato sauce - 100 grams (preferably no added sugar)
- Red bell pepper - 1/2, diced
- Zucchini - 1/2, diced
- Feta cheese - 50 grams, crumbled
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Remove the stems and leaves from the cauliflower, then pulse florets in a food processor until they resemble rice.
- Transfer the riced cauliflower to a microwave-safe bowl and microwave for about 5-7 minutes until softened.
- Let the cauliflower cool for a few minutes, then place it in a clean kitchen towel and wring out as much moisture as possible.
- In a large mixing bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, garlic powder, cumin, coriander, paprika, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20-25 minutes until golden and firm.
- While the crust is baking, heat the olive oil in a skillet over medium heat. Add the diced bell pepper and zucchini; sauté for 5-7 minutes until tender.
- Remove the crust from the oven and spread the tomato sauce evenly on top.
- Add the sautéed vegetables and sprinkle with crumbled feta cheese.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Remove from the oven, garnish with fresh parsley, slice, and serve.
