Ingredients

  • Almond flour - 150 grams
  • Ground chicken - 250 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Sliced olives - 50 grams
  • Feta cheese - 50 grams, crumbled
  • Paprika - 1 teaspoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and translucent, about 5 minutes.
  3. Add the ground chicken to the skillet, followed by cinnamon, cumin, ginger, salt, and pepper. Cook until the chicken is browned and cooked through, about 10 minutes. Remove from heat and stir in chopped parsley, sliced olives, and crumbled feta cheese.
  4. In a mixing bowl, combine almond flour, remaining olive oil, and the egg. Mix until a dough forms. If the dough is too crumbly, add a little water until it holds together.
  5. On a parchment-lined baking sheet, press the dough into a circular shape about 1/2 inch thick, creating a crust.
  6. Spread the chicken mixture evenly over the crust, leaving a small border around the edges.
  7. Sprinkle paprika over the top and place in the preheated oven. Bake for 20-25 minutes or until the crust is golden brown.
