- Lamb leg - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, chopped rosemary, chopped thyme, and lemon juice to create a marinade.
- Rub the marinade all over the lamb leg, ensuring it is well coated. Let it marinate for at least 30 minutes or up to 2 hours for more flavor.
- Place the marinated lamb in a baking dish and pour 100 ml of water around it to keep it moist during cooking.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
- After 1 hour, remove the foil and continue baking for an additional 30 minutes, basting occasionally with the juices, until the lamb is tender and golden brown.
- Once cooked, remove from the oven and let it rest for 10 minutes before slicing and serving.
