Ingredients

  • Lamb leg - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, chopped rosemary, chopped thyme, and lemon juice to create a marinade.
  3. Rub the marinade all over the lamb leg, ensuring it is well coated. Let it marinate for at least 30 minutes or up to 2 hours for more flavor.
  4. Place the marinated lamb in a baking dish and pour 100 ml of water around it to keep it moist during cooking.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.
  6. After 1 hour, remove the foil and continue baking for an additional 30 minutes, basting occasionally with the juices, until the lamb is tender and golden brown.
  7. Once cooked, remove from the oven and let it rest for 10 minutes before slicing and serving.
