Ingredients

  • Green beans - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 200 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the canned diced tomatoes, ground cumin, paprika, salt, and black pepper. Let the mixture simmer for 5-7 minutes until slightly thickened.
  5. Add the green beans to the skillet and stir until they are well coated with the tomato mixture.
  6. Transfer the mixture to a baking dish and cover with aluminum foil.
  7. Bake in the preheated oven for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes to allow the top to slightly crisp.
  9. Once done, remove from the oven and sprinkle with fresh parsley and crumbled feta cheese, if using. Serve warm.
