Ingredients
- Green beans - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 200 grams
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the canned diced tomatoes, ground cumin, paprika, salt, and black pepper. Let the mixture simmer for 5-7 minutes until slightly thickened.
- Add the green beans to the skillet and stir until they are well coated with the tomato mixture.
- Transfer the mixture to a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to slightly crisp.
- Once done, remove from the oven and sprinkle with fresh parsley and crumbled feta cheese, if using. Serve warm.
