Ingredients

  • Lamb shoulder, cut into chunks - 400 grams
  • Cauliflower, riced - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato paste - 1 tablespoon
  • Beef or lamb broth - 250 ml
  • Almonds, slivered - 30 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Lemon, juiced - 1/2

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the diced carrot and red bell pepper, cooking for another 5 minutes.
  4. Add the lamb chunks to the pot, browning them on all sides.
  5. Sprinkle in the ground cumin, coriander, cinnamon, paprika, turmeric, salt, and black pepper, stirring well to coat the lamb in the spices.
  6. Mix in the tomato paste and broth, bringing the mixture to a simmer.
  7. Cover the pot and reduce the heat to low, allowing it to cook for 40 minutes until the lamb is tender.
  8. While the lamb cooks, prepare the cauliflower rice by steaming it until tender, about 5-7 minutes.
  9. Once the lamb is cooked, stir in the slivered almonds and lemon juice.
  10. Serve the lamb tagine over the cauliflower rice, garnished with fresh cilantro.
