- Cauliflower, riced - 300 grams

- Garlic, minced - 3 cloves
- Carrot, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Tomato paste - 1 tablespoon
- Beef or lamb broth - 250 ml
- Almonds, slivered - 30 grams
- Fresh cilantro, chopped - 2 tablespoons
- Lemon, juiced - 1/2
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Stir in the diced carrot and red bell pepper, cooking for another 5 minutes.
- Add the lamb chunks to the pot, browning them on all sides.
- Sprinkle in the ground cumin, coriander, cinnamon, paprika, turmeric, salt, and black pepper, stirring well to coat the lamb in the spices.
- Mix in the tomato paste and broth, bringing the mixture to a simmer.
- Cover the pot and reduce the heat to low, allowing it to cook for 40 minutes until the lamb is tender.
- While the lamb cooks, prepare the cauliflower rice by steaming it until tender, about 5-7 minutes.
- Once the lamb is cooked, stir in the slivered almonds and lemon juice.
- Serve the lamb tagine over the cauliflower rice, garnished with fresh cilantro.
