Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Cumin - 2 teaspoons
  • Coriander - 2 teaspoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 200 ml

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, mix together olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, and lemon juice to create a marinade.
  3. Rub the marinade all over the lamb shoulder, ensuring it is well-coated. Let it marinate for at least 30 minutes, or ideally overnight in the refrigerator.
  4. Place the marinated lamb in a roasting pan and add 200 ml of water to the bottom of the pan.
  5. Cover the roasting pan with aluminum foil and bake in the preheated oven for 2 hours.
  6. After 2 hours, remove the foil and increase the oven temperature to 200°C (392°F). Roast for an additional 30 minutes, or until the lamb is golden brown and tender.
  7. Remove from the oven and let the lamb rest for 10 minutes before slicing.
  8. Garnish with chopped fresh parsley and serve.
