Ingredients
- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Cumin - 2 teaspoons
- Coriander - 2 teaspoons
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Water - 200 ml
Steps
- Preheat the oven to 160°C (320°F).
- In a bowl, mix together olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, and lemon juice to create a marinade.
- Rub the marinade all over the lamb shoulder, ensuring it is well-coated. Let it marinate for at least 30 minutes, or ideally overnight in the refrigerator.
- Place the marinated lamb in a roasting pan and add 200 ml of water to the bottom of the pan.
- Cover the roasting pan with aluminum foil and bake in the preheated oven for 2 hours.
- After 2 hours, remove the foil and increase the oven temperature to 200°C (392°F). Roast for an additional 30 minutes, or until the lamb is golden brown and tender.
- Remove from the oven and let the lamb rest for 10 minutes before slicing.
- Garnish with chopped fresh parsley and serve.
