- Ground beef - 300 grams
- Ground lamb - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Parsley - 30 grams, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower - 300 grams, riced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Beef broth - 200 ml
- Lemon - 1, juiced
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine ground beef, ground lamb, chopped onion, minced garlic, cilantro, parsley, cumin, paprika, cinnamon, salt, and black pepper. Mix well until fully combined.
- Shape the meat mixture into small meatballs, about 2.5 cm in diameter.
- In a large oven-safe skillet or tagine, heat the olive oil over medium heat. Add the meatballs and brown them on all sides, about 5-7 minutes. Remove the meatballs and set aside.
- In the same skillet, add the riced cauliflower, diced zucchini, and red bell pepper. Sauté for about 5 minutes until the vegetables begin to soften.
- Stir in the tomato paste and beef broth, bringing the mixture to a simmer. Add the meatballs back to the skillet.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes.
- Remove from the oven and drizzle with fresh lemon juice before serving.
