Ingredients

  • Ground beef - 300 grams
  • Ground lamb - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Parsley - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 300 grams, riced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Beef broth - 200 ml
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine ground beef, ground lamb, chopped onion, minced garlic, cilantro, parsley, cumin, paprika, cinnamon, salt, and black pepper. Mix well until fully combined.
  3. Shape the meat mixture into small meatballs, about 2.5 cm in diameter.
  4. In a large oven-safe skillet or tagine, heat the olive oil over medium heat. Add the meatballs and brown them on all sides, about 5-7 minutes. Remove the meatballs and set aside.
  5. In the same skillet, add the riced cauliflower, diced zucchini, and red bell pepper. Sauté for about 5 minutes until the vegetables begin to soften.
  6. Stir in the tomato paste and beef broth, bringing the mixture to a simmer. Add the meatballs back to the skillet.
  7. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes.
  8. Remove from the oven and drizzle with fresh lemon juice before serving.
