Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 50 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Ground beef - 200 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped parsley - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Tomato sauce (no sugar added) - 100 grams
  • Bell pepper (sliced) - 1/2 medium

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Steam the cauliflower florets until tender, about 5-7 minutes, then drain and cool slightly.
  3. Using a food processor, pulse the steamed cauliflower until it resembles rice, then transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 20 minutes or until golden brown.
  7. While the crust is baking, prepare the kefta by mixing ground beef, chopped onion, minced garlic, cumin, paprika, cinnamon, salt, black pepper, and chopped parsley in a bowl until well combined.
  8. Form small meatballs or patties with the kefta mixture.
  9. Heat olive oil in a skillet over medium heat, and cook the kefta for about 8-10 minutes, turning occasionally until browned and cooked through.
  10. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  11. Arrange the cooked kefta on top of the sauce, followed by the sliced bell pepper.
  12. Return the pizza to the oven and bake for an additional 10 minutes, until the peppers are tender.
  13. Remove from oven, let cool slightly, slice, and serve.
