- Egg - 1 large
- Almond flour - 50 grams
- Ground beef - 200 grams
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped parsley - 2 tablespoons
- Olive oil - 1 tablespoon
- Tomato sauce (no sugar added) - 100 grams
- Bell pepper (sliced) - 1/2 medium
Steps
- Preheat the oven to 200°C (400°F).
- Steam the cauliflower florets until tender, about 5-7 minutes, then drain and cool slightly.
- Using a food processor, pulse the steamed cauliflower until it resembles rice, then transfer to a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20 minutes or until golden brown.
- While the crust is baking, prepare the kefta by mixing ground beef, chopped onion, minced garlic, cumin, paprika, cinnamon, salt, black pepper, and chopped parsley in a bowl until well combined.
- Form small meatballs or patties with the kefta mixture.
- Heat olive oil in a skillet over medium heat, and cook the kefta for about 8-10 minutes, turning occasionally until browned and cooked through.
- Remove the crust from the oven and spread the tomato sauce evenly over the top.
- Arrange the cooked kefta on top of the sauce, followed by the sliced bell pepper.
- Return the pizza to the oven and bake for an additional 10 minutes, until the peppers are tender.
- Remove from oven, let cool slightly, slice, and serve.
