Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Celery - 1 stalk, diced
  • Carrot - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Bay leaf - 1
  • Diced tomatoes - 400 grams, canned
  • Vegetable broth - 500 ml
  • Zucchini - 1 medium, diced
  • Cauliflower rice - 200 grams
  • Chickpeas - 100 grams, canned, drained and rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrot, and sauté until softened, about 5 minutes.
  2. Add the minced garlic, cumin, coriander, paprika, cinnamon, and bay leaf. Stir for about 1 minute until fragrant.
  3. Pour in the diced tomatoes and vegetable broth. Bring to a simmer and cook for 10 minutes.
  4. Add the diced zucchini, cauliflower rice, and chickpeas. Simmer for an additional 10 minutes until the vegetables are tender.
  5. Remove the bay leaf and stir in the chopped parsley, lemon juice, salt, and black pepper to taste.
  6. Serve hot, garnished with additional parsley if desired.
