- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Celery - 1 stalk, diced
- Carrot - 1 medium, diced
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Bay leaf - 1
- Diced tomatoes - 400 grams, canned
- Vegetable broth - 500 ml
- Zucchini - 1 medium, diced
- Cauliflower rice - 200 grams
- Chickpeas - 100 grams, canned, drained and rinsed
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrot, and sauté until softened, about 5 minutes.
- Add the minced garlic, cumin, coriander, paprika, cinnamon, and bay leaf. Stir for about 1 minute until fragrant.
- Pour in the diced tomatoes and vegetable broth. Bring to a simmer and cook for 10 minutes.
- Add the diced zucchini, cauliflower rice, and chickpeas. Simmer for an additional 10 minutes until the vegetables are tender.
- Remove the bay leaf and stir in the chopped parsley, lemon juice, salt, and black pepper to taste.
- Serve hot, garnished with additional parsley if desired.
