Ingredients

  • Almond flour - 150g
  • Psyllium husk powder - 15g
  • Baking powder - 5g
  • Salt - 1g
  • Water - 150ml
  • Olive oil - 30ml
  • Ground cumin - 5g
  • Ground coriander - 5g
  • Paprika - 5g
  • Ground cinnamon - 2g
  • Chopped fresh parsley - 10g
  • Chopped fresh cilantro - 10g
  • Sliced olives - 30g
  • Cheese (mozzarella or feta) - 100g

Steps

  1. In a large bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  2. In a separate bowl, mix water and olive oil, then slowly pour it into the dry ingredients while stirring until a dough forms.
  3. Knead the dough for a couple of minutes until it becomes smooth. Let it rest for 5 minutes.
  4. Preheat a non-stick skillet over medium heat.
  5. Divide the dough into two equal portions and roll each into a flat, round shape about 0.5 cm thick.
  6. Cook each flatbread in the skillet for about 3-4 minutes on each side until golden brown and cooked through.
  7. In a small bowl, mix ground cumin, ground coriander, paprika, and ground cinnamon.
  8. Sprinkle the spice mixture evenly over the cooked flatbreads.
  9. Top each flatbread with chopped parsley, cilantro, sliced olives, and cheese.
  10. Cover the skillet with a lid and let the cheese melt for about 2-3 minutes.
  11. Serve warm, garnished with additional herbs if desired.
