Ingredients

  • Fennel bulbs - 2 medium, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 200 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine sliced fennel, olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper. Toss until the fennel is well coated.
  3. Transfer the fennel mixture to a baking dish and pour the vegetable broth over it.
  4. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  5. Remove the foil, drizzle the lemon juice over the fennel, and return to the oven for an additional 10-15 minutes, or until the fennel is tender and slightly caramelized.
  6. Once cooked, remove from the oven and let cool for a few minutes before garnishing with fresh parsley.
