- Fennel bulbs - 2 medium, sliced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 200 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine sliced fennel, olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper. Toss until the fennel is well coated.
- Transfer the fennel mixture to a baking dish and pour the vegetable broth over it.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil, drizzle the lemon juice over the fennel, and return to the oven for an additional 10-15 minutes, or until the fennel is tender and slightly caramelized.
- Once cooked, remove from the oven and let cool for a few minutes before garnishing with fresh parsley.
