  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50g, crumbled (optional)

Steps

  1. Thinly slice the fennel bulb and cucumber using a sharp knife or mandoline.
  2. Halve the cherry tomatoes and set aside.
  3. In a large mixing bowl, combine the sliced fennel, cucumber, and cherry tomatoes.
  4. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and black pepper.
