Ingredients

  • Almond flour - 150 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Fennel bulb (thinly sliced) - 100 grams
  • Kalamata olives (pitted and sliced) - 50 grams
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, and repeat until melted and combined.
  3. In a mixing bowl, add the almond flour, egg, oregano, cumin, salt, and black pepper. Mix well, then add the melted cheese mixture and combine until a dough forms.
  4. Place the dough on a sheet of parchment paper and press it into a pizza shape, about 1/2 inch thick.
  5. Transfer the crust on the parchment paper to a baking sheet or pizza stone and bake for 10-12 minutes, or until golden brown.
  6. While the crust is baking, heat olive oil in a pan over medium heat. Add the sliced fennel and sauté for about 5-7 minutes until softened.
  7. Once the crust is ready, remove it from the oven and top with the sautéed fennel and sliced olives.
