- Almond flour - 150 grams
- Mozzarella cheese (shredded) - 150 grams
- Cream cheese - 50 grams
- Egg - 1 large
- Fennel bulb (thinly sliced) - 100 grams
- Kalamata olives (pitted and sliced) - 50 grams
- Olive oil - 1 tablespoon
- Dried oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (chopped) - for garnish
Steps
- Preheat the oven to 220°C (425°F).
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, and repeat until melted and combined.
- In a mixing bowl, add the almond flour, egg, oregano, cumin, salt, and black pepper. Mix well, then add the melted cheese mixture and combine until a dough forms.
- Place the dough on a sheet of parchment paper and press it into a pizza shape, about 1/2 inch thick.
- Transfer the crust on the parchment paper to a baking sheet or pizza stone and bake for 10-12 minutes, or until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat. Add the sliced fennel and sauté for about 5-7 minutes until softened.
- Once the crust is ready, remove it from the oven and top with the sautéed fennel and sliced olives.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the toppings are heated through.
- Remove from the oven, garnish with fresh parsley, slice, and serve immediately.
