- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, sliced
- Tomato - 1 medium, diced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the olive oil, minced garlic, chopped onion, and all the spices (cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper). Mix well.
- Add the chicken thighs to the bowl and coat them thoroughly with the spice mixture. Let it marinate for at least 15 minutes.
- In a baking dish, place the marinated chicken thighs. Surround them with diced bell pepper, sliced zucchini, and diced tomato.
- Drizzle the lemon juice over the chicken and vegetables, then cover the dish with aluminum foil.
- Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10 minutes to brown the chicken.
- Once done, remove from the oven and sprinkle with fresh chopped cilantro before serving.
