Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Feta cheese - 50g, crumbled (optional)
  • Avocado - 1 medium, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1/2 medium, thinly sliced
  • Lettuce leaves - 4 large

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the eggplant into 1.5 cm thick rounds and sprinkle both sides with salt. Let them sit for about 10 minutes to remove excess moisture.
  3. Rinse the salt off the eggplant slices and pat them dry with a paper towel.
  4. In a small bowl, mix together olive oil, cumin, coriander, smoked paprika, black pepper, and garlic powder.
  5. Brush both sides of the eggplant slices with the olive oil spice mixture.
  6. Grill the eggplant slices for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  7. While the eggplant is grilling, prepare the toppings: slice the avocado, tomato, and red onion, and chop the parsley and mint.
  8. Once the eggplant is done, assemble the burgers by placing a grilled eggplant slice on a lettuce leaf, topping it with avocado, tomato, red onion, and feta cheese (if using).
  9. Finish with a sprinkle of fresh parsley and mint before serving. Optionally, wrap the lettuce around the fillings for a handheld burger experience.
