Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Feta cheese - 50g, crumbled (optional)
- Avocado - 1 medium, sliced
- Tomato - 1 medium, sliced
- Red onion - 1/2 medium, thinly sliced
- Lettuce leaves - 4 large
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the eggplant into 1.5 cm thick rounds and sprinkle both sides with salt. Let them sit for about 10 minutes to remove excess moisture.
- Rinse the salt off the eggplant slices and pat them dry with a paper towel.
- In a small bowl, mix together olive oil, cumin, coriander, smoked paprika, black pepper, and garlic powder.
- Brush both sides of the eggplant slices with the olive oil spice mixture.
- Grill the eggplant slices for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- While the eggplant is grilling, prepare the toppings: slice the avocado, tomato, and red onion, and chop the parsley and mint.
- Once the eggplant is done, assemble the burgers by placing a grilled eggplant slice on a lettuce leaf, topping it with avocado, tomato, red onion, and feta cheese (if using).
- Finish with a sprinkle of fresh parsley and mint before serving. Optionally, wrap the lettuce around the fillings for a handheld burger experience.
