Ingredients
- Cauliflower rice - 200 grams
- Chicken breast - 150 grams, diced
- Ground lamb - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almonds - 30 grams, sliced
- Raisins - 20 grams (optional, for a slight sweetness)
- Fresh parsley - 2 tablespoons, chopped, for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
- Add the diced chicken breast and ground lamb to the skillet. Cook until browned, about 5-7 minutes.
- Stir in the diced red bell pepper, cumin, coriander, turmeric, paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld.
- In a separate bowl, combine the cauliflower rice with the remaining tablespoon of olive oil, mixing well.
- In a baking dish, layer the cauliflower rice at the bottom, followed by the meat and vegetable mixture on top. If using, sprinkle the raisins and sliced almonds over the top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
- Once done, remove from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
