Ingredients

  • Chicken thighs - 400 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 4 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a food processor, combine the cilantro, parsley, garlic, cumin, coriander, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until a smooth paste forms.
  3. Place the chicken thighs in a baking dish and coat them evenly with the chermoula marinade. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator for enhanced flavor.
  4. After marination, bake the chicken in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  5. Once done, remove from the oven and let it rest for 5 minutes before serving.
