- Chicken thighs - 400 grams
- Fresh cilantro - 30 grams
- Fresh parsley - 30 grams
- Garlic - 4 cloves
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a food processor, combine the cilantro, parsley, garlic, cumin, coriander, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until a smooth paste forms.
- Place the chicken thighs in a baking dish and coat them evenly with the chermoula marinade. Let it marinate for at least 15 minutes, or up to 2 hours in the refrigerator for enhanced flavor.
- After marination, bake the chicken in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Once done, remove from the oven and let it rest for 5 minutes before serving.
