Ingredients
- Chicken breast - 300 grams
- Almond flour - 100 grams
- Egg - 1 large
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Chicken broth - 100 milliliters
- Almonds - 50 grams, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, ground cinnamon, ground ginger, paprika, salt, and black pepper to the skillet. Cook for another 2 minutes until fragrant.
- Add the chicken breast to the skillet and pour in the chicken broth. Cover and simmer for about 20 minutes until the chicken is cooked through.
- Remove the chicken from the skillet and shred it using two forks. Mix in the chopped parsley and cilantro, and set aside.
- In a bowl, combine the almond flour and the remaining tablespoon of olive oil. Mix well to form a dough.
- Line a small baking dish with parchment paper. Press half of the almond flour dough into the bottom to create a crust.
- Spread the shredded chicken mixture evenly over the crust, then sprinkle the chopped almonds on top.
- Roll out the remaining almond flour dough and place it over the chicken mixture, sealing the edges well.
- Beat the egg and brush it over the top crust for a golden finish.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
