Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Chicken broth - 100 milliliters
  • Almonds - 50 grams, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, ground cinnamon, ground ginger, paprika, salt, and black pepper to the skillet. Cook for another 2 minutes until fragrant.
  4. Add the chicken breast to the skillet and pour in the chicken broth. Cover and simmer for about 20 minutes until the chicken is cooked through.
  5. Remove the chicken from the skillet and shred it using two forks. Mix in the chopped parsley and cilantro, and set aside.
  6. In a bowl, combine the almond flour and the remaining tablespoon of olive oil. Mix well to form a dough.
  7. Line a small baking dish with parchment paper. Press half of the almond flour dough into the bottom to create a crust.
  8. Spread the shredded chicken mixture evenly over the crust, then sprinkle the chopped almonds on top.
  9. Roll out the remaining almond flour dough and place it over the chicken mixture, sealing the edges well.
  10. Beat the egg and brush it over the top crust for a golden finish.
  11. Bake in the preheated oven for 25-30 minutes until the top is golden brown.
  12. Let it cool for a few minutes before slicing and serving.
