Ingredients

  • Boneless chicken thighs - 300 grams
  • Almond flour - 100 grams
  • Eggs - 2 large
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Almonds - 50 grams, slivered
  • Water - 200 milliliters

Steps

  1. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the chicken thighs to the pan, followed by the ground cinnamon, ginger, turmeric, paprika, salt, and black pepper. Pour in the water, cover, and simmer for 25-30 minutes until the chicken is tender.
  3. Once cooked, remove the chicken from the pan and shred it using two forks. Mix in cilantro and lemon juice, then set aside to cool.
  4. In a bowl, beat the eggs and mix half with the almond flour to create a dough-like consistency. Divide the dough into two equal portions.
  5. On a parchment-lined baking sheet, press one portion of the dough into a round shape, about 1 cm thick. Preheat the oven to 180°C (350°F).
  6. Layer half of the shredded chicken mixture on top of the dough base, followed by a sprinkle of slivered almonds.
  7. Roll out the second portion of the dough and place it over the chicken filling, sealing the edges. Brush the top with the remaining beaten egg.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and crispy.
