Ingredients
- Boneless chicken thighs - 300 grams
- Almond flour - 100 grams
- Eggs - 2 large
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1 teaspoon
- Ground ginger - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Almonds - 50 grams, slivered
- Water - 200 milliliters
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the chicken thighs to the pan, followed by the ground cinnamon, ginger, turmeric, paprika, salt, and black pepper. Pour in the water, cover, and simmer for 25-30 minutes until the chicken is tender.
- Once cooked, remove the chicken from the pan and shred it using two forks. Mix in cilantro and lemon juice, then set aside to cool.
- In a bowl, beat the eggs and mix half with the almond flour to create a dough-like consistency. Divide the dough into two equal portions.
- On a parchment-lined baking sheet, press one portion of the dough into a round shape, about 1 cm thick. Preheat the oven to 180°C (350°F).
- Layer half of the shredded chicken mixture on top of the dough base, followed by a sprinkle of slivered almonds.
- Roll out the second portion of the dough and place it over the chicken filling, sealing the edges. Brush the top with the remaining beaten egg.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and crispy.
