Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons (chopped)
  • Fresh cilantro - 2 tablespoons (chopped)
  • Garlic - 2 cloves (minced)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Cherry tomatoes - 100 grams (halved)
  • Feta cheese - 75 grams (crumbled)
  • Red onion - 1/4 (thinly sliced)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 30 seconds, stir, and repeat until melted and well combined.
  3. In a mixing bowl, add almond flour, egg, baking powder, and salt. Pour in the melted cheese mixture and mix until a dough forms.
  4. Transfer the dough to a parchment-lined baking sheet and press it into a pizza shape, about 1/2 inch thick.
  5. In a separate bowl, mix together the chopped parsley, cilantro, minced garlic, cumin, paprika, olive oil, and lemon juice to make the chermoula sauce.
  6. Spread the chermoula sauce evenly over the pizza base.
  7. Top the pizza with halved cherry tomatoes, sliced red onion, and crumbled feta cheese.
  8. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
