Ingredients

  • Cauliflower - 1 medium head (approximately 600g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon (optional for heat)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves from the cauliflower and cut it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  4. In a large mixing bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, black pepper, parsley, cilantro, lemon juice, and red chili flakes (if using). Mix well to create the chermoula sauce.
  5. Add the cauliflower rice to the bowl with the chermoula sauce and toss until all the cauliflower is well coated.
  6. Spread the chermoula cauliflower evenly on a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the cauliflower is tender and slightly crispy.
  8. Remove from the oven and let it cool for a few minutes before serving. Enjoy warm.
