- Carrots - 300 grams, peeled and cut into thin strips
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the carrot strips, olive oil, cumin, coriander, paprika, salt, and black pepper. Toss until the carrots are well coated.
- Spread the carrot mixture evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20 minutes, or until the carrots are tender and starting to caramelize, stirring halfway through.
- Remove the carrots from the oven and let them cool slightly.
- In a serving bowl, mix the roasted carrots with the fresh parsley and lemon juice.
- If desired, sprinkle crumbled feta cheese on top before serving.
