Ingredients

  • Carrots - 300 grams, peeled and cut into thin strips
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the carrot strips, olive oil, cumin, coriander, paprika, salt, and black pepper. Toss until the carrots are well coated.
  3. Spread the carrot mixture evenly on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20 minutes, or until the carrots are tender and starting to caramelize, stirring halfway through.
  5. Remove the carrots from the oven and let them cool slightly.
  6. In a serving bowl, mix the roasted carrots with the fresh parsley and lemon juice.
  7. If desired, sprinkle crumbled feta cheese on top before serving.
