- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Zucchini - 1 medium, sliced into rounds
- Red bell pepper - 1 medium, cut into squares
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a bowl, mix olive oil, garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to overnight.
- Preheat the oven to 200°C (400°F).
- Thread the marinated lamb onto skewers, alternating with zucchini and red bell pepper pieces.
- Place the skewers on a baking tray lined with parchment paper.
- Drizzle with lemon juice and sprinkle chopped parsley over the skewers.
- Bake in the preheated oven for 20-25 minutes, turning halfway through, until the lamb is cooked to your desired doneness.
- Remove from the oven and let rest for a few minutes before serving.
