Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Zucchini - 1 medium, sliced into rounds
  • Red bell pepper - 1 medium, cut into squares
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, mix olive oil, garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the oven to 200°C (400°F).
  4. Thread the marinated lamb onto skewers, alternating with zucchini and red bell pepper pieces.
  5. Place the skewers on a baking tray lined with parchment paper.
  6. Drizzle with lemon juice and sprinkle chopped parsley over the skewers.
  7. Bake in the preheated oven for 20-25 minutes, turning halfway through, until the lamb is cooked to your desired doneness.
