Ingredients

  • Almond flour - 150 grams
  • Ground flaxseed - 30 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Zucchini - 100 grams, sliced
  • Bell pepper - 50 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, ground flaxseed, baking powder, salt, cumin, paprika, and garlic powder.
  3. In a separate bowl, whisk together the eggs and olive oil until well combined.
  4. Pour the wet mixture into the dry ingredients and mix until a dough forms.
  5. Place the dough on a parchment-lined baking sheet and press it into a circular pizza shape, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15 minutes or until golden brown.
  7. While the crust is baking, prepare the toppings by sautéing the zucchini and bell pepper in a non-stick skillet over medium heat for 5 minutes until slightly softened.
  8. Remove the crust from the oven and layer the sautéed vegetables, cherry tomatoes, and crumbled feta cheese on top.
  9. Return the pizza to the oven and bake for an additional 10 minutes until the cheese is slightly melted.
