- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper, diced - 1 medium (150 grams)
- Zucchini, diced - 1 medium (200 grams)
- Cauliflower florets - 200 grams
- Tomato paste - 2 tablespoons
- Beef broth - 300 milliliters
- Fresh cilantro, chopped - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a large, oven-safe pot or tagine, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
- Add the cubed beef to the pot and brown on all sides, about 6-8 minutes.
- Stir in the cumin, coriander, cinnamon, paprika, ginger, salt, and pepper. Cook for another 2 minutes to toast the spices.
- Add the diced red bell pepper, zucchini, and cauliflower florets to the pot, mixing well.
- Stir in the tomato paste and beef broth until everything is well combined.
- Bring the mixture to a simmer, then cover the pot with a lid or foil.
- Transfer to the preheated oven and bake for 60 minutes, or until the beef is tender.
- Remove from the oven, stir in the chopped cilantro, and serve hot.
