  • Beef chuck, cubed - 400 grams
  • Olive oil - 2 tablespoons
  • Onion, chopped - 1 medium (150 grams)
  • Garlic, minced - 3 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper, diced - 1 medium (150 grams)
  • Zucchini, diced - 1 medium (200 grams)
  • Cauliflower florets - 200 grams
  • Tomato paste - 2 tablespoons
  • Beef broth - 300 milliliters
  • Fresh cilantro, chopped - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large, oven-safe pot or tagine, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
  4. Add the cubed beef to the pot and brown on all sides, about 6-8 minutes.
  5. Stir in the cumin, coriander, cinnamon, paprika, ginger, salt, and pepper. Cook for another 2 minutes to toast the spices.
  6. Add the diced red bell pepper, zucchini, and cauliflower florets to the pot, mixing well.
  7. Stir in the tomato paste and beef broth until everything is well combined.
  8. Bring the mixture to a simmer, then cover the pot with a lid or foil.
  9. Transfer to the preheated oven and bake for 60 minutes, or until the beef is tender.
  10. Remove from the oven, stir in the chopped cilantro, and serve hot.
