- Almond flour - 200 grams
- Psyllium husk powder - 15 grams
- Baking powder - 5 grams
- Salt - 1 teaspoon
- Egg - 1 large
- Water - 150 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cooked chicken or lamb (shredded) - 100 grams
- Chopped fresh parsley - 2 tablespoons
- Feta cheese (crumbled) - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, salt, cumin, and coriander.
- In a separate bowl, whisk together the egg, water, and olive oil.
- Gradually pour the wet ingredients into the dry ingredients, mixing until a dough forms.
- Knead the dough for a few minutes until it becomes smooth and pliable.
- Divide the dough into two equal portions and shape each into a flat round disc, about 1-2 cm thick.
- Place the discs on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes or until golden brown on top.
- While the batbout is baking, mix the shredded chicken or lamb with chopped parsley and crumbled feta cheese.
- Once the batbout is done, remove from the oven and let cool slightly before slicing them open and filling with the meat mixture.
