Ingredients

  • Almond flour - 200 grams
  • Psyllium husk powder - 15 grams
  • Baking powder - 5 grams
  • Salt - 1 teaspoon
  • Egg - 1 large
  • Water - 150 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cooked chicken or lamb (shredded) - 100 grams
  • Chopped fresh parsley - 2 tablespoons
  • Feta cheese (crumbled) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, salt, cumin, and coriander.
  3. In a separate bowl, whisk together the egg, water, and olive oil.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing until a dough forms.
  5. Knead the dough for a few minutes until it becomes smooth and pliable.
  6. Divide the dough into two equal portions and shape each into a flat round disc, about 1-2 cm thick.
  7. Place the discs on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown on top.
  9. While the batbout is baking, mix the shredded chicken or lamb with chopped parsley and crumbled feta cheese.
  10. Once the batbout is done, remove from the oven and let cool slightly before slicing them open and filling with the meat mixture.
