Ingredients
- Chicken thighs - 300 grams
- Almond flour - 100 grams
- Eggs - 2 large
- Butter - 30 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Almonds - 30 grams, chopped
- Parsley - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chicken thighs to the skillet along with the cinnamon, cumin, paprika, salt, and black pepper. Cook for about 10-12 minutes until the chicken is browned.
- Add 1 cup of water to the skillet, cover, and let it simmer for about 20 minutes or until the chicken is cooked through and tender.
- Once cooked, remove the chicken from the pan and let it cool. Shred the chicken into bite-sized pieces.
- In a bowl, combine the shredded chicken, chopped almonds, parsley, and lemon juice. Mix well.
- In a separate bowl, whisk the eggs and then combine with almond flour to create a thick batter.
- Grease a small baking dish with butter and spread half of the almond flour mixture on the bottom to form a crust.
- Layer the chicken mixture on top of the crust, then spread the remaining almond flour mixture over the chicken to form a top crust.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
- Allow to cool for a few minutes before slicing and serving.
