Ingredients

  • Chicken thighs - 300 grams
  • Almond flour - 100 grams
  • Eggs - 2 large
  • Butter - 30 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 30 grams, chopped
  • Parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the chicken thighs to the skillet along with the cinnamon, cumin, paprika, salt, and black pepper. Cook for about 10-12 minutes until the chicken is browned.
  5. Add 1 cup of water to the skillet, cover, and let it simmer for about 20 minutes or until the chicken is cooked through and tender.
  6. Once cooked, remove the chicken from the pan and let it cool. Shred the chicken into bite-sized pieces.
  7. In a bowl, combine the shredded chicken, chopped almonds, parsley, and lemon juice. Mix well.
  8. In a separate bowl, whisk the eggs and then combine with almond flour to create a thick batter.
  9. Grease a small baking dish with butter and spread half of the almond flour mixture on the bottom to form a crust.
  10. Layer the chicken mixture on top of the crust, then spread the remaining almond flour mixture over the chicken to form a top crust.
  11. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  12. Allow to cool for a few minutes before slicing and serving.
