Ingredients

  • Chicken thighs - 400 grams
  • Almond flour - 50 grams
  • Almonds, sliced - 30 grams
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix the almond flour, paprika, cumin, cinnamon, garlic powder, salt, and black pepper.
  3. Add the chicken thighs to the bowl and coat them well with the spice mixture.
  4. In a large oven-safe skillet, heat the olive oil over medium heat and sear the chicken thighs for about 3-4 minutes on each side until golden brown.
  5. Remove the skillet from heat and sprinkle the sliced almonds over the chicken.
  6. Drizzle lemon juice over the top and transfer the skillet to the preheated oven.
  7. Bake for 25-30 minutes until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Once done, remove from the oven and garnish with fresh parsley before serving.
