- Chicken thighs - 400 grams
- Almond flour - 50 grams
- Almonds, sliced - 30 grams
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, mix the almond flour, paprika, cumin, cinnamon, garlic powder, salt, and black pepper.
- Add the chicken thighs to the bowl and coat them well with the spice mixture.
- In a large oven-safe skillet, heat the olive oil over medium heat and sear the chicken thighs for about 3-4 minutes on each side until golden brown.
- Remove the skillet from heat and sprinkle the sliced almonds over the chicken.
- Drizzle lemon juice over the top and transfer the skillet to the preheated oven.
- Bake for 25-30 minutes until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Once done, remove from the oven and garnish with fresh parsley before serving.
