Ingredients

  • Firm tofu - 250 grams
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Press the tofu to remove excess moisture, then crumble it into a large mixing bowl.
  2. Add the finely chopped red onion, minced garlic, parsley, cilantro, cumin, paprika, cinnamon, salt, and black pepper to the bowl with the crumbled tofu.
  3. Drizzle the olive oil over the mixture and combine all the ingredients until well mixed.
  4. Divide the mixture into 4 equal portions and mold each portion around a skewer to form long kebabs.
  5. Preheat your grill or grill pan over medium heat and lightly oil the grates.
  6. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until they are golden brown and slightly charred.
  7. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.
