Ingredients
- Ground beef - 250 grams
- Almond flour - 30 grams
- Egg - 1 large
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zucchini - 2 medium (for zoodles)
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Canned diced tomatoes - 200 grams
- Chicken or beef broth - 100 ml
- Cilantro - for garnish
Steps
- In a bowl, combine ground beef, almond flour, egg, parsley, cumin, cinnamon, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Form the mixture into small meatballs, about 2.5 cm in diameter.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining olive oil and the chopped onion. Sauté until softened, about 3-4 minutes.
- Add the canned diced tomatoes and broth to the skillet. Stir well and bring to a simmer.
- Return the meatballs to the skillet, cover, and let simmer for an additional 10 minutes, allowing the flavors to meld.
- While the sauce is simmering, spiralize the zucchini into zoodles using a spiralizer or julienne peeler.
- In a separate pan, lightly sauté the zoodles in a little olive oil for about 2-3 minutes until just tender.
- Serve the meatballs and sauce over the zoodles, garnished with fresh cilantro.
