Ingredients

  • Ground beef - 250 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zucchini - 2 medium (for zoodles)
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Canned diced tomatoes - 200 grams
  • Chicken or beef broth - 100 ml
  • Cilantro - for garnish

Steps

  1. In a bowl, combine ground beef, almond flour, egg, parsley, cumin, cinnamon, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Form the mixture into small meatballs, about 2.5 cm in diameter.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the remaining olive oil and the chopped onion. Sauté until softened, about 3-4 minutes.
  5. Add the canned diced tomatoes and broth to the skillet. Stir well and bring to a simmer.
  6. Return the meatballs to the skillet, cover, and let simmer for an additional 10 minutes, allowing the flavors to meld.
  7. While the sauce is simmering, spiralize the zucchini into zoodles using a spiralizer or julienne peeler.
  8. In a separate pan, lightly sauté the zoodles in a little olive oil for about 2-3 minutes until just tender.
  9. Serve the meatballs and sauce over the zoodles, garnished with fresh cilantro.
