Ingredients

  • Ground beef - 250 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Red bell pepper - 1, diced
  • Eggs - 2
  • Lemon - 1, juiced

Steps

  1. In a mixing bowl, combine ground beef, chopped parsley, chopped cilantro, minced garlic, cumin, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
  2. Heat olive oil in a tagine or a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add diced red bell pepper and cook for 3-4 minutes until softened.
  4. Add the canned diced tomatoes to the skillet, stir well, and bring to a simmer. Return the meatballs to the skillet and let them simmer in the sauce for about 10 minutes.
  5. Create a small well in the sauce and crack an egg into it. Repeat with the second egg. Cover and cook until the eggs are set to your liking, around 5-7 minutes.
  6. Drizzle with lemon juice before serving. Serve hot with a garnish of additional fresh herbs if desired.
