Ingredients
- Ground beef - 250 grams
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Red bell pepper - 1, diced
- Eggs - 2
- Lemon - 1, juiced
Steps
- In a mixing bowl, combine ground beef, chopped parsley, chopped cilantro, minced garlic, cumin, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
- Heat olive oil in a tagine or a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add diced red bell pepper and cook for 3-4 minutes until softened.
- Add the canned diced tomatoes to the skillet, stir well, and bring to a simmer. Return the meatballs to the skillet and let them simmer in the sauce for about 10 minutes.
- Create a small well in the sauce and crack an egg into it. Repeat with the second egg. Cover and cook until the eggs are set to your liking, around 5-7 minutes.
- Drizzle with lemon juice before serving. Serve hot with a garnish of additional fresh herbs if desired.
