  • Water - 300 milliliters
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Chickpea flour - 30 grams
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Pita bread - 2 pieces
  • Lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced

Steps

  1. Rinse the brown lentils under cold water and place them in a pot with 300 milliliters of water. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain any excess water and let cool slightly.
  2. In a large bowl, combine the cooked lentils, chopped red onion, minced garlic, parsley, cilantro, cumin, coriander, smoked paprika, cinnamon, chickpea flour, salt, and pepper. Mix well until everything is combined into a thick mixture.
  3. Divide the lentil mixture into two equal portions and shape each portion into a burger patty.
  4. Heat the olive oil in a non-stick skillet over medium heat. Cook the lentil patties for about 4-5 minutes on each side until they are golden brown and crispy.
  5. Warm the pita bread either in the skillet or in a toaster. Assemble the burgers by placing a lentil patty in each pita pocket. Top with lettuce, tomato, and cucumber slices.
