Ingredients

  • Chickpeas - 200 grams, cooked
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 30 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Mixed salad greens - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the chopped red onion, minced garlic, parsley, cumin, paprika, cilantro, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into small patties, about 5 cm in diameter.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side, or until golden brown. Remove and set aside.
  5. In a large bowl, toss the salad greens, cherry tomatoes, and cucumber together.
  6. In a small bowl, whisk together the remaining olive oil and lemon juice. Drizzle over the salad and toss gently to combine.
  7. Serve the salad topped with the kefta patties and sprinkle with crumbled feta cheese if desired.
