- Chickpeas - 200 grams, cooked
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro - 30 grams, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Mixed salad greens - 100 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the chopped red onion, minced garlic, parsley, cumin, paprika, cilantro, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into small patties, about 5 cm in diameter.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side, or until golden brown. Remove and set aside.
- In a large bowl, toss the salad greens, cherry tomatoes, and cucumber together.
- In a small bowl, whisk together the remaining olive oil and lemon juice. Drizzle over the salad and toss gently to combine.
- Serve the salad topped with the kefta patties and sprinkle with crumbled feta cheese if desired.
