Ingredients

  • Ground beef or lamb - 250 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Canned diced tomatoes - 400 grams
  • Eggs - 2 large
  • Water - 200 milliliters

Steps

  1. In a bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, and black pepper. Mix well and form small meatballs, about the size of a walnut.
  2. Heat olive oil in a medium skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the skillet and set aside.
  3. In the same skillet, add the canned diced tomatoes and water, stirring to combine. Bring to a simmer and then return the meatballs to the skillet.
  4. Cover the skillet and let the meatballs simmer in the tomato sauce for about 15 minutes, allowing the flavors to meld.
  5. Make small wells in the sauce and crack an egg into each well. Cover the skillet again and cook until the eggs are set to your liking, about 5 minutes for runny yolks.
  6. Serve hot, garnished with additional parsley if desired, alongside crusty bread for dipping.
