- Ground beef or lamb - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Canned diced tomatoes - 400 grams
- Eggs - 2 large
- Water - 200 milliliters
Steps
- In a bowl, combine the ground meat, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, and black pepper. Mix well and form small meatballs, about the size of a walnut.
- Heat olive oil in a medium skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the canned diced tomatoes and water, stirring to combine. Bring to a simmer and then return the meatballs to the skillet.
- Cover the skillet and let the meatballs simmer in the tomato sauce for about 15 minutes, allowing the flavors to meld.
- Make small wells in the sauce and crack an egg into each well. Cover the skillet again and cook until the eggs are set to your liking, about 5 minutes for runny yolks.
- Serve hot, garnished with additional parsley if desired, alongside crusty bread for dipping.
