Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 milliliters
  • Active dry yeast - 7 grams
  • Olive oil - 30 milliliters
  • Salt - 5 grams
  • Ground beef - 200 grams
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 15 grams, chopped
  • Parsley - 15 grams, chopped
  • Ground cumin - 5 grams
  • Ground cinnamon - 2 grams
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Tomato sauce - 100 grams
  • Bell pepper - 50 grams, sliced
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a bowl, combine warm water and yeast. Let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center, then add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise for 30 minutes.
  4. In the meantime, prepare the kefta: In a mixing bowl, combine ground beef, onion, garlic, cilantro, parsley, cumin, cinnamon, salt, and black pepper. Mix well until combined.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, divide it into two equal pieces and roll each piece into a circle about 25 cm in diameter.
  7. Spread a thin layer of tomato sauce on each flatbread, then evenly distribute the kefta mixture over the sauce.
  8. Top with sliced bell peppers and crumbled feta cheese.
  9. Bake for 15-20 minutes or until the edges are golden brown and the kefta is cooked through.
  10. Remove from the oven, allow to cool slightly, then slice and serve warm.
