Ingredients
- Zucchini - 150 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Chickpea flour - 50 grams
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - for frying
Steps
- In a large bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, chopped onion, and minced garlic.
- Add the chickpea flour, coriander powder, cumin powder, paprika, salt, black pepper, and chopped parsley to the vegetable mixture. Mix well until all ingredients are combined.
- Form the mixture into small patties, about 5 cm in diameter.
- Heat olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove the patties from the pan and place them on a paper towel to drain excess oil.
- Serve warm with a side of yogurt or tahini sauce for dipping.
