Ingredients

  • Zucchini - 150 grams, grated
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Chickpea flour - 50 grams
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - for frying

Steps

  1. In a large bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, chopped onion, and minced garlic.
  2. Add the chickpea flour, coriander powder, cumin powder, paprika, salt, black pepper, and chopped parsley to the vegetable mixture. Mix well until all ingredients are combined.
  3. Form the mixture into small patties, about 5 cm in diameter.
  4. Heat olive oil in a frying pan over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Remove the patties from the pan and place them on a paper towel to drain excess oil.
  6. Serve warm with a side of yogurt or tahini sauce for dipping.
