- Zucchini - 100 grams, grated

- Chickpea flour - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- In a large mixing bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, chopped onion, and minced garlic.
- Add the chickpea flour, chopped parsley, cumin powder, paprika, salt, and black pepper to the bowl, and mix well until all ingredients are evenly combined.
- Form the mixture into small patties, about 5 cm in diameter, ensuring they hold together well.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
- Once the oil is hot, carefully place the patties in the skillet, cooking them in batches if necessary, and fry for 3-4 minutes on each side until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
- Serve warm with a side of yogurt or tahini sauce for dipping.
