  • Onion (finely grated) - 1 medium
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Skewers (soaked in water if wooden) - 4

Steps

  1. In a large bowl, combine the ground lamb or beef, grated onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined, then form the mixture into oval-shaped patties or mold them onto the skewers.
  3. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  4. Preheat your grill or grill pan over medium-high heat, and brush it with olive oil to prevent sticking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the meat is browned and cooked through.
