- Ground beef - 250 grams
- Ground lamb - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Canned crushed tomatoes - 400 grams
- Eggs - 4 large
- Red bell pepper - 1 medium, diced
- Chili powder - 1/2 teaspoon
Steps
- In a mixing bowl, combine the ground beef, ground lamb, finely chopped onion, minced garlic, parsley, cilantro, cumin, paprika, cinnamon, salt, and black pepper. Mix until well combined.
- Shape the mixture into small meatballs, about 2.5 cm in diameter.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove the meatballs and set aside.
- In the same skillet, add diced red bell pepper and sauté for 3-4 minutes until softened.
- Pour in the canned crushed tomatoes and chili powder, stirring to combine. Bring to a simmer.
- Return the meatballs to the skillet, cover, and let simmer for 10 minutes to allow the flavors to meld.
- Make small wells in the sauce and crack an egg into each well. Cover the skillet and cook for an additional 5-7 minutes, or until the eggs are cooked to your liking.
- Serve hot, garnished with extra parsley and cilantro if desired.
